Owned and operated by the Icon Hospitality Group who have a successful history of turning local hotels into modern day drinking and dining establishments, The Bourbon still retains its 24 hour license making it one of the only places in Sydney to drink and dine until the early hours.
A well considered wine list is priced to please and cocktails are a house speciality created by highly awarded barman Dan Wooley. The sexy red and black poolroom will double as a private function space holding up to 100 guests. There is also a Dj booth where guest Dj will play groovy background music from Thursday to Sunday.

Interior designer Andrew Parr has ditched the showbiz kitsch in a shock-and-awe refit involving volcanic stone floors, timber-slatted ceilings, lime-green banquettes and cute bar staff. The look is more '50s suburban LA than trashy Hollywood.
Colin Holt (formerly of Claude's, Bistro Moncur, Bistro Pave) is supervising a contemporary menu. Forget the spring rolls and sesame soy chicken wings - now it's sardines with vierge sauce, prime fillet with potato puree and panacotta for dessert.
